My fish special: Duo of grilled Hawaiian Marlin and spice crusted scallop, Amaranth, sauteed seabeans, romano and waxy beans, a mango-apricot salsa, and chimichuri drizzle.
Last week I was on the fish station, my personal favorite station to line cook on. There was King Salmon, Halibut, Hawaiina Marlin, Tiger prawns and scallops to play with, and all the starch, veg, sauce accompaniments to be had. Definitely good times.
