A Cold Winter's Night

At 4 degrees celsius these nights, I start to crave the likes of thick hot casseroles, and steaming hot pot pies. But just as hearty and warming is a nice clean bowl of Southeast Asian broth with all the trimings.

For this I had some ready wonton wrappers.


To make my filling I combined ground pork, scallions, onions, garlic, fish sauce, sesame oil, and seasonings. I placed a small ball center of the wrappers (below) and made parcels (above), using an egg to seal.

The broth was a slow simmer of mirapoix of scallions, onions, garlic, hot pepper, ginger, and seasonings.


The result is a warming and satisfying meal.
